Almond, coconut, Apple muffin (paleo)

Almond coconut apple muffins

 

1 1/2 cups ground almonds
3 tablespoons dessicated coconut
1/2 teaspoon baking soda
2 tablespoons of ground cinnamon
Pinch of salt
2 apples cored and ground in a good processor
2 tablespoons maple syrup
2 tablespoons of coconut oil
1/2 cup of coconut milk
3 eggs

 

Combine the almonds, coconut, baking soda, cinnamon and salt in a bowl. Mix well and then add in the apples, maple syrup, coconut oil (melted) coconut milk and eggs. Stir (but don’t beat) using a wooden spoon.

 

Spoon into a muffin tray with paper cases lined 3/4 full and bake in a pre heated oven for 25-30 minutes at 190 degrees centigrade until they are firm to the touch and slightly browned.

Eat soon or risk someone else gobbling them up for you
