Caramel Berry Slice


This could possibly be my favorite raw cake yet! Although I say that about all of them ? But seriously, crunchy base, caramel, sweet and tangy jamminess and then a creamy vanilla finale. So so yum! And so simple to make! Hope you’ll love it! ?

1/2 cup buckinis
1/4 cup almonds
1/4 cup cashews
1/2 cup dates (pre soaked)pitted
1 tablespoon coconut oil

1 cup dates soaked and pitted
2 heaped tablespoons cashew butter
1 teaspoon coconut oil
Pinch of sea salt
1 teaspoon vanilla extract

Cherry jam

1 cup frozen cherries / raspberries
1/4 cup water
1 tablespoon coconut nectar / maple syrup
2 tablespoons chia seeds

Vanilla layer

1 cup soaked cashews
1 teaspoon vanilla extract
Pinch of sea salt
Juice of half a lime
1 tablespoon melted cacao butter
2 tablespoons maple syrup / agave
1/4 cup coconut mylk
To make the base grind your ingredients together in a food processor until they all come together into a sticky dough. Press into your springform / if using a loaf pan line with some baking parchment. Freeze as you prepare your fillings

To make the caramel
Blend all your ingredients together until creamy. Pour caramel over base and return to freezer for 30 minutes

To make the chia jam
In a small saucepan combine all your ingredients except the chia seeds and bring to simmer. Once the berries are nice and mushy turn off the heat and cool. Add in your chia seeds and stir well. Allow to cool. Then pour over the cake and freeze for 30 minutes

To make the vanilla cream
Combine all your ingredients except the cacao butter and blend til smooth and creamy. Stream in your cacao butter and keep blending until mixed in.

Pour your vanilla cream over the berry jam and freeze for a minimum of four hours. Allow to defrost for 20 minutes before slicing and serving

    Oh gosh these sound divine! Fruity, carameley (is that even a word?!) goodness! One of these days I need to revive my inner domestic goddess and make these!
