Cashew, lemon overnight oats


There’s nothing like having breakfast ready when you wake up in the morning. And this is basically like a one pot wonder. You throw everything in the night before and in the morning you’re left with a creamy, healthy, super filling breakfast! The best part about overnight oats is that you can mix up the flavors all the time so you never get bored. And if you’re not a fan of porridge then this is its sexier cousin ?

Serves 2

6 tablespoons oats

2 tablespoons chopped cashews

1 tablespoon chia seeds

3 dates chopped up (I processed mine in a food processor)

1 tablespoon lemon juice

1 tablespoon coconut sugar (or maple syrup)

1 1/2 cups nut milk (I used almond milk)

in a medium sized container simply mix all your ingredients together well, cover and refrigerate overnight. In the morning you may need to add some more milk to make the oats slightly more creamy. Then simply serve up, top with fruit/nuts and enjoy!
