Chocolate Chia Parfaits


My favorite part of eating healthy is that it doesn’t necessary have to be mediocre , or repetitive and it most certainly can taste like dessert, yes, even for breakfast ❤️

My absolute weakness is salted caramel, so any thing that can possibly have it included on or in it is a winner to me.

You have to try these chocolate chia parfaits, for breakfast or dessert. I made a similar one for my partner in crime with layers of granola instead of chia pudding which tasted really good – a little like a muller dessert.

To make the cacao smoothie

2 frozen bananas
1/2 an avocado
2 tablespoons cacao powder
1/2 teaspoon maca powder (optional)
2 pitted dates
1/2 cup of milk of choice

Simply add all your ingredients to your blender and pulse until smooth. Place in fridge until ready to layer up

To make the chia pudding

3 tablespoons chia seeds
1 cup of yoghurt (I used coco yoghurt)
1/4 cup water
1/4 spoon vanilla extract

Place your chia seeds in a glass bowl/jar and add in the rest of your ingredients. Whisk well and refrigerate for at least one hour (or overnight)

To make the salted caramel

1/2 cup pitted dates
2 tablespoons cashew/ almond butter
1/2 teaspoon of sea salt
1/4 teaspoon vanilla extract
4 tablespoons of warm water

Soak your dates for 1/2 an hour in hot water. Then add all your ingredients to a blender / food processor and blend until smooth. The salted caramel keeps in the fridge for 3 to 4 days but I doubt it will last that long ?

Now, layer up your parfait! I made layers of cacao smoothie, chia pudding, cacao smoothie, chia pudding and then topped it all with salted caramel and some hemp hearts. Finally you can add some fruit on top to make it extra delicious! ?
