Cinnamon Apple Paleo Muffins


So I’ve recently decided to head the Paleo way and so far I’m absolutely loving it! For those of you who aren’t familiar with paleo, its basically changing your mind set toward food – back to basics, back to how cavemen ate and eliminating anything that isn’t natural, or that is farmed, or manufactured from your diet. It focuses on real, wholesome food which is what hunters used to do hundreds of years ago.


Once I’ve been doing it for a little while longer I will do a separate blog post on  my personal experience with switching to paleo. At the moment I’m still slightly on the fence, not toward paleo but my own dependence on legumes especially and a little bit on grains such as oats and rye bread. Paleo can be difficult for vegetarians because you aren’t allowed any legumes or any grains nor rice or potatoes. I find that recently I’m eating fish, chicken and ALOT of eggs combined with vegetables, nuts and fruit. Which in essence is exactly what the paleo way wants you to do. I’m a big fan of eggs and chicken so for me this has been heaven.


Anyway, back to this blog post. This afternoon I had my first attempt at creating some homemade – from scratch – paleo cinnamon apple muffins. I’ve been craving something that tastes like apple pie, sweet, warm and spicy so these are the flavours I had in mind today. They turned out well, they’re moist and crunchy on the outside and the cinnamon and nutmeg flavour comes through wonderfully.

You need a cup of apple sauce for the muffins so this is how to make that:


3 apples (green or red or a combination) roughly chopped with skin


two tablespoons honey


1 tablespoon apple cider vinegar


2 teaspoons ghee (clarified butter)


1/4 cup of water


Put all the ingredients in a pan and simmer over a medium heat for approximately 15 minutes or until the apples are tender and most the water has evaporated. Allow to cool and then blend until smooth and set aside.


Muffins (makes approx. 12)


You need 2 1/4 cups of a blend of almonds, cashews and dried coconut. ( I used more almonds and cashews than coconut) just put all of them into a food processor until they resemble fine bread crumbs


2 tablespoons flax meal


1 teaspoon cinnamon


1/4 teaspoon nutmeg (go easy on this or you may find yourself in a deep slumber post muffin) 😉


1/2 teaspoon baking powder


3 tablespoons coconut oil


1 cup applesauce (see above for recipe)


2 eggs   1 teaspoon pure vanilla extract


Mix all the dry ingredients in a bowl. In a separate bowl, melt the coconut oil (in the microwave for 10 seconds on high), beat in the two eggs, add the apple sauce and vanilla essence. Add the wet mix to the dry ingredients and mix well.  You can do this by hand, and there is no need to beat the  mixture.


Spoon the mixture into paper cases – almost full because they don’t rise much – set on a muffin tray and bake in a pre heated oven for 15-18 minutes at 180 C or until firm to the touch and slightly golden. I sprinkled chia seeds on mine before baking but you could top with cinnamon, or hemp seeds or dried coconut flakes.
