Fridays always seem to fuel my creativity – I guess they’re usually a celebration of a great week passed. I love coconut as I’m sure my past posts reveal – so this was something ive been wanting to try my hand at for a while
Chia Pudding
4 tablespoon of chia seeds
1 1/2 cups of coconut milk and almond milk combined
2 tablespoons of honey
1 dessert spoon of cinnamon
I combined all the ingredients and stirred well and then transferred the mixture to a glass jar which I refrigerated overnight – by morning you have a lovely creamy pudding. if its too dry you can add some milk of any kind or even a little bit of water/ coconut water
For the strawberry beet mousse
6 large strawberries
1 large beetroot
1/2 cup of coconut cream
combine all the ingredients and blend for a couple of minutes until you have a thick cream which you can refrigerate as well in preparation for your breakfast the next morning
Wake up, stretch and smile knowing you have some deliciousness waiting for you.
In a mason jar layer up the chia pudding and mousse and top with fruit and nuts of your choice. Voila!
