hey guys! I know I always say this, but I think this is my new fave cake πŸ™ˆπŸ˜ I have another older snickers recipe but this one is creamier and messier and so gooood! Also, with a little blending and mixing and throwing together it’s so simple to make. All you have to do is wait for it to set.

Things to do whilst it sets:

1. Have a quick workout

2. Have a soak in a bubble filled bath

3. Have a glass of chilled prosessco

4. Catch a nap

yes, I did all of the above and then ate cake 🀩πŸ€ͺ

Ingredients:

Base
1 cup dates soaked and pitted
1/2 cup cashews
1/2 cup pecans
1/2 cup macadamias
2 tablespoons peanut butter
2 tablespoons coconut oil
1 teaspoon vanilla
Pinch of sea salt

Filling

1 cup cashews soaked for four hours and then rinsed and drained
1 cup dates soaked and pitted
2 tablespoons coconut butter
2 tablespoons peanut butter
1 teaspoon vanilla extract
Pinch of sea salt
1/2 cup cashew mylk
1 teaspoon psyllium husks

Chocolate ganache
200gms dark chocolate
1/2 cup coconut milk from a can
1/4 cup maple syrup
1 teaspoon vanilla extract
Pinch of sea salt

To make your base

Pulse the nuts together until roughly chopped and set aside. Add the rest of your base ingredients to your food processor and blend until soft and well combined. Add in your nuts again and pulse to combine. Press into a spring form tin or lined baking tray and freeze as your prepare your filling

To make your filling

Combine all your ingredients in your high speed blender and blend until soft and creamy. Pour your filling over the base and freeze for atleast four hours or overnight.

To make the chocolate ganache

Add your chocolate and coconut milk to a saucepan and heat gently at a low heat. Stir frequently until the chocolate melts and you are left with a relatively thick mixture. Turn off the heat and add your maple syrup, vanilla and salt. Allow to cool completely and then pour over your snickers cake. Return to freezer for 10 minutes to set.

Before serving allow your cake to defrost for 15 to 30 minutes before slicing.
