Falooda – the healthy way;)


Falooda, is a cold beverage popular in the Indian subcontinent. Traditionally it is made from mixing rose syrup, vermicelli, psyllium or basil seeds, tapioca pearls and pieces of gelatin with milk or water. Wikipedia is so handy πŸ˜‰

I love this drink, it brings back memories of my childhood every time I see it but I can’t remember the last time I actually had one ?

I had to try and make a healthy version of it which was dairy and refined sugar free so here’s what I got:


To make the chia part

2 tablespoons chia seeds
1/2 cup of nut milk
1 tablespoon maple syrup
1/2 teaspoon vanilla extract
1 teaspoon raspberry powder (optional)

Mix all the ingredients for the chia mixture together and refrigerate for at least four hours or overnight

To make the strawberry icecream

1 frozen banana
1 cup frozen strawberries
1/2 cup coco yoghurt (or regular yoghurt)

Blend all your ingredients together until you’re left with a thick creamy mixture that resembles icecream. Pop this into a plastic container and freeze until ready to use. (When you want to assemble your falooda you will need to remove this from the freezer about 5 minutes in advance)

To make the mylk

1/2 cup presoaked cashews (I soaked mine overnight but four hours is fine)
400ml water
1/2 cup raspberries
2 tablespoons maple syrup

Blend all the above ingredients in your blender until smooth. You should have a pretty pink “milk”.

For the raspberry compΓ΄te

1/2 cup raspberries
2 teaspoons coconut sugar (or regular sugar)

Simply muddle the raspberries and sugar together and allow to sit for five minutes

To assemble:

In a tall glass pour your milk, then drop in two or three tablespoons of your chia mix and two teaspoons of the raspberry compΓ΄te. Lightly mix so you can see the different textures. Top with your icecream and some chopped pistachios.
