Fudgey Chocolate Raw Brownies

DECADENCE … that’s what I wanted these to be, Β to bite into themΒ and get that fudgey chocolatey taste, to feel like your craving for something Β rich and naughty had been satisfied πŸ˜‹ these are all raw, super nutty, and extremely naughty without actually being bad for you. You could very well have one, or two at the same time 😜

2 cups dates (softened in hot water and pitted)
1 cup almonds
1 cup pecans / or walnuts
1 tablespoon cashew butter
1 teaspoon vanilla extract
1/2 teaspoon sea salt
1/4 cup cacao powder
2 tablespoons coconut oil

In your food processor pulse your nuts together until they are broken down but still nutty. Set aside in a bowl. Now blend all your other ingredients until you’re left with a smooth mixture. Pour this over your nuts and mix by hand until well combined. Press this mix into a prelined baking tray and freeze overnight.

For the chocolate ganache

2 tablespoons cashew butter
2 tablespoons cacao butter
1 tablespoon coconut oil
2 tablespoons maple syrup
1 teaspoon vanilla extract
Pinch of sea salt

Combine everything together in a saucepan and melt over a low heat until you’re left with a smooth slightly runny mixture. Pour this over your brownies and quickly smooth over with a spatula. Return to the freezer for 5 minutes to set, then you can slice your brownies up. Best stored in the freezer.
