It may be pancake day today but I finally got myself to sit down and write up the recipe for these waffles which I promised a very long time ago (!). And since, I’ve used the same batter to make American pancakes so there you are! a multi purpose recipe which is grain free, and healthy. These waffles aren’t too sweet so you can choose to make them sweeter or leave them as they are so you can then top with eggs or bacon or grilled tomatoes. Whatever you’re into that day haha! Enjoy them.


 

Grain Free Breakfast Waffles Recipe

  • 1 cup cassava flour
  • 1 tsp baking powder
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons coconut sugar ( more if you want them sweeter. You can use regular sugar if you don’t have coconut sugar)
  • 3 tablespoons coconut oil melted
  • 3 tablespoonsΒ coconut milk
  • 3 tablespoons water
  • 2 eggs

Mix all the dry ingredients into a bowl and then add in the wet ingredients. whisk well until you have a fairly thick creamy batter.Β  Make sure your waffle iron is very hot and lightly greased before pouring over a ladle full of batter for each waffle. cook for approximately 4 to 5 minutes until golden brown.

You can make a big batch of these and freeze them too.
