Layered mango cream with granola

I tend to use mainly seasonal fruits and vegetables and this week when I went shopping there were so many offers on the berries and mangos that I went a little overboard and now have a house that’s over flowing with fruit – but oh the smell is divine!

This morning I made a mango cream with

1 ripe chopped mango

3 tablespoons of desiccated coconut

1 frozen banana

1/2 cup of coconut milk

Blended and then chilled so it was lovely and thick

 

for my homemade granola I usually combine

1 cup of coconut

1 cup of mixed nuts

1/2 cup of pumpkin, sunflower and sesame seeds

and I dry roast these on a low heat on the gas / electric cooker for approximately 10 minutes until the coconut is slightly browned. This is a great alternative to oats (which are fine too but I’m eating paleo so not oats for me)and it gives a great crunchy feel to smoothies. Cool and transfer to a glass bottle/jar and this keeps for a week outside (not refrigerated).

 

Layer up the mango cream with the granola and top with any fruit and a tablespoon of honey/ maple syrup drizzled over.
