Mango and Passion Chia Pudding Mousse


Am loving the abundance of mangoes available at this time of the year – they are like a celebration of summer with their bright yellow color and juicy sweetness. I cant help but sneak a little bit of mango into all my food at the moment! I love using them in smoothies, adding them to salads and turning them into a sweet salsa to enjoy with some chicken. But this morning I had them in mousse form and it was utterly delicious. combined with the tangy sourness of passion fruit and a 27 degree morning I may as well have been semi-reclined on a sun lounger as I devoured it!

Serves 2

1 ripe mango cubed

1 frozen banana

pulp of 2 passionfruit

1 date

5 tablespoons chia seeds

1 cup of nut milk (I used my fave cashew milk)

Simply pop all your ingredients into your blender and blitz until smooth and creamy. Then transfer to a glass jar and refrigerate overnight. In the morning you will have breakfast at hand, creamy, dreamy and full of summer!
