Mango, lemon & poppy seed pancakes


I wrote this recipe as I made these pancakes this morning, but I’m finishing this up after eating them and OMG. I think I may have just found my favorite recipe for pancake Sundays (pancakes errrryday). They taste like little morsels of the tropics. I don’t think that sentence makes any sense – but you know what I mean. It’s like a beach day on a plate. And the mango and passionfruit works so well together. I hope you enjoy them as much as I did! ???


Mango lemon poppy seed pancakes (makes approximately 12 small pancakes)

1/2 cup cassava flour
1/2 cup rice flour
1/2 teaspoon baking powder
2 tablespoons coconut sugar (or brown sugar)
1 tablespoon poppy seeds
2 eggs (or a flax egg)
2 teaspoons lemon juice
1/2 cup of nut milk (I used cashew)
1/2 cup puréed mango

Mix all your dry ingredients in a bowl and then slowly add in your wet ingredients and mix gently. No need to whisk. On a hot skillet greased with a little coconut oil, drop ladle fulls of batter until browned, flip and allow to cook til golden. Serve with fruit, coconut flakes and some maple syrup. I used passion fruit, mango and peanut butter as my toppings.
