Mango Pineapple Mousse


Breakfasts are a fruity affair in this house and I usually use oodles of fruit combined with a nut milk and topped with more nuts and seeds and colourful berries.  Because we usually workout in the evening – our dinners are usually extremely protein rich and therefore breakfast is more high carb to provide energy for the rest of the day. But I’ve been known to enjoy these fruity concoctions first thing in the morning and then snack on half a dozen eggs come 10am 😉

Mango Pineapple Mousse

1 large mango

1 cup of chopped pineapple

1/2 cup of coconut milk

1 tablespoon of almond powder

Blend all the ingredients until you have a rich creamy consistency.

In a jar or bowl layer the mousse with desiccated coconut and quinoa puffs and top with pistachios and pecans. feel free to switch up the milk you use – im allergic to dairy and thus use a lot of almond and coconut milk but you can substitute with regular milk, yoghurt, anything. Same goes for the fruit and nuts that you choose to top up your mousse with <3
