Mango Turmeric Smoothie Bowl with Vanilla Chia Pudding

Mango Turmeric Smoothie Bowl with Vanilla Chia Pudding

What better reason to have breakfast in the morning? A bowl filled with antioxidants (blueberries)Β and anti-inflammatory (turmeric) ingredients which tastes good and is even better for you. Two different textures in one keeps it entertaining as your mouth is treated to a flavour party first thing in the morning. And because you can prepare it all the night before there’s no excuse for missing out on the most important meal of the day!

Serves Two

For the smoothie bowl

2 frozen bananas

1 mango cubed

1 teaspoon turmeric

Β½ cup of nut milk (I used cashew milk)

Toss all your ingredients into a grinder and blitz until smooth and then refrigerate until ready to use.

For the vanilla Chia Pudding

4 tablespoons chia seeds

Β½ teaspoon vanilla extract

1 cup of nut milk (I used coconut)

2 tablespoons of maple syrup

In a bowl mix all your ingredients and whisk well. Transfer to a glass jar and refrigerate overnight. In the morning stir well and if the pudding is too thick add some milk to give it a smoother consistency.

Into a serving bowl pour your smoothie onto one side and your chia pudding onto the other. Top with:

2 strawberries (per bowl)

5 blueberries

1 tablespoon of dry coconut

A sprinkle of poppy seeds
