What if I told you you could have these for breakfast? From start to finish you could be enjoying these in less than an hour ❤️ Just pre soak your cashews now and you’re good to go!

Also, they’re decidedly messy, so maybe don’t have them on a first date 🙈 but I love messy food, somehow just makes it all the more pleasurable. Sticky, messy and so fun!

(Makes four mini tarts)

Base

1/2 cup walnuts
1/2 cup rolled oats
1/2 cup pitted dates (soften in hot water for 10 minutes if hard)
1 tablespoon coconut butter or coconut oil
1 tablespoon cashew butter
Pinch of sea salt

In your food processor combine your walnuts and oats until they’re crumbly. Add in your coconut butter, cashew butter, salt and dates and pulse until you have a doughy mix. Press into your mini tart tins and freeze whilst you prepare the filling

Filling

1 cup cashews soaked for atleast four hours then rinsed and drained
1/4 cup plant based mylk
1 tablespoon maple syrup

Blend everything til smooth and then split the mixture in half. Add 1 teaspoon vanilla extract to one half of the mixture and 1 tablespoon cacao powder to the other half and blend again.
Pour over your prepared tart cases and freeze for atleast one hour.

    Wow, these mini cream tarts look so pretty and I can’t wait to make them. I have to buy mini tart molds on Amazon because I would really love to try out your recipe. Gorgeous photos and wonderful recipe, hun 🙂
