Overnight oats are a fabulous way to eat oats, actually enjoy them and not feel like you’re eating boring old porridge. This is a great breakfast for those who love to eat cereal, don’t usually have time for an elaborate breakfast and also prefer their morning food cold rather than steaming hot! Overnight oats are also extremely versatile because you can substitute the oats with spelt, millet or quinoa and also interchange the flavours to something you may be particularly fond of – (peanut butter peanut butter peanut butter!!!) 🙂 I go for this particular combination below because not only is it nutritionally balanced in terms of carbs and protein but the mix of nuts and seeds provide a super dose of minerals and omegas.

 

Here you go

 

6 handfuls of instant oats

1 tablespoon chia seeds

2 tablespoons dried shredded coconut

2 teaspoons almond powder

2 teaspoons flax meal

2 teaspoons of mixed ground seeds – sesame, pumpkin, sunflower

1 tablespoon of maple syrup (or agave)

1 teaspoon of ground cinnamon

1 1/2 cups of any milk (dairy, almond, soy)

 

Combine all ingredients in a jar. Stir well and refrigerate overnight (see, super easy!). In the morning, stir again and add milk to achieve a thick but still moist consistency. Best served chilled. Makes a great breakfast on the go.

Variations:

  • Add in chopped bananas or mixed berries
  • A tablespoon of peanut butter
  • A tablespoon of cacao and coffee for a rich and dark start to your day!

    Deffo trying this for breakfast! I never understood what overnight oats was but it 100% sounds better than having porridge for breakfast everyday!
