And then there are those mornings when you want something warm,  crunchy but soft, sweet but healthy. Today was such a morning. I woke up knowing that I was going to have waffles but I wanted something dairy free and gluten free and this is what I ended up with:)

The recipe

Ingredients:

  • 1/2 cup of finely ground almonds
  • 5 tablespoons of finely ground coconut
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 3 tablespoons of coconut milk (you can use regular milk or any nut milk)
  • 1 tablespoon melted coconut oil
  • 1 teaspoon vanilla essence
  • 1 teaspoon honey for sweetness (optional)

Method

Combine all the dry ingredients into a bowl

Into a measuring jug add the eggs and bear them with the milk until well mixed and creamy. add the rest of the wet ingredients and mix again. add the dry ingredients into the measuring jug and mix again until well combined and then allow the mixture to sit for five minutes. it will now have the consistency of American pancake batter.

Pour the mixture into a pre heated waffled iron and cook for approximately three minutes. I usually check on the waffles after a minute to make sure they aren’t burning.

They’re now and good and ready to be devoured!
