Quinoa Porridge


The weather in Nairobi has taken a turn for the cooooold! I find myself craving comfort food – which I’m trying to keep healthy and nourishing. This is my first time making quinoa porridge and I loved it! I made it last night and then refrigerated it overnight so the result was almost like a creamy rice pudding. Also having breakfast ready when you wake up is always a win!

serves one

1 cup cooked quinoa

1/2 cup nut milk (I used cashew) you can always use dairy if you like

1/2 teaspoons vanilla extract

1 tablespoon coconut sugar (optional)

1 tablespoon chia seeds

put your quinoa and milk in a saucepan and bring to a simmer. Cook for approximately 5 minutes until you’re left with a creamy porridge. Remove from heat, and stir in your coconut sugar. Once slightly cooled add in your chia seeds and vanilla extract. Then serve immediately or refrigerate overnight for a cold pudding like porridge.
