Raspberry chia pudding mousse


Breakfast I believe should be delicious. After all you are breaking the fast after a good 12 hours away from eating 🙂 and if it’s gorgeous at the same time all the better!

I started my day with this scrumptious, filling and protein rich brekkie – raspberry chia pudding – mousse. Here’s how you make it:

half a packet of fresh raspberries

250 ml of cashew milk (or any milk)

5 tablespoons chia seeds

4 dates pitted

1/2 teaspoon vanilla extract

simply place all your ingredients into your blender (I use a nutribullet) and blend until smooth. Transfer into a glass jar and refrigerate overnight.

In the morning I simply layered up my mousse with some muddled berries, homemade granola and topped with some coconut.
