If you’re looking for a delicious afternoon pick me up, or a fix for that “I need something sweet and chocolatey” craving then look no further. These raw “candy” bites are chewy, nutty and decadent and make you feel like you indulged in something somewhat guilty.

Really easy to make, and they keep in the fridge for a week (not that they’ll last that long!)

 

Ingredients

1/3 cup dried goji berries
1 cup unsweetened coconut flakes
1/2 cup almond meal
1/4 cup pitted Β dates – soaked in water for 10 minutes
2 tbsp coconut oil, melted
1 tbsp raw cacao powder
1 tsp vanilla essence
1 pinch of dried mint
Pinch of salt

 

InΒ a food processor blitz the goji berries and set aside in a bowl.

Drain the soaked dates and blitz in food processor. Add the rest of the ingredients and pulse for a few minutes until you’re left with a dough like mixture. Add this mixture to the bowl of goji berries and stir together. Refrigerate for 20 minutes and then roll into bite sized balls.

I then rolled mine into toasted coconut flakes and sesame seeds but you can leave them as they are or roll in some cacao powder or chia seeds or crushed nuts.

Perfect as as a pre workout snack too!
