Raw Cherry Brownie Slice


This raw slice is loosely based around the famous Black Forest cake, but I wanted a raw nutty version so decided to go with a rich Chocolate brownie base topped with a  tangy sweet and sour cherry filling. If you are eating fully raw then you could omit toasting the nuts and just use them in their raw form. But I personally love the toasted flavor of them and they really do enhance the brownie taste. You could also make this into whatever shape you like, or make two smaller 4” cakes. Hope you enjoy them!

makes Approx 10 slices. I used an 8” tart tin

Brownie base
1 cup hazelnuts
1/2 cup cashews
1/2 cup almonds
1 cup pre soaked and pitted dates
3 tablespoons cacao powder
1 teaspoon vanilla extract
Pinch of sea salt

1 cup soaked cashews
1 cup frozen cherries
1/2 cup dates soaked and pitted
Juice of one lime
1 teaspoon vanilla
2 tablespoons maple syrup
1 cup coconut mylk
2 tablespoons melted coconut oil

Preheat your oven to 130c and lay out your nuts on your baking sheet. Roast for 10 minutes until lightly golden but keep an eye on them as they burn easy. Remove from oven and allow to cool. Then into your food processor add the nuts and the rest of your base ingredients and process until you are left with a dough like mix. Press into your cake pan and freeze as your prepare your filling.

Add all your ingredients except your coconut oil to your blender and blend til smooth. Stream in your coconut oil and blend again until well combined. Pour your filling over the prepared base and freeze for atleast four hours. Allow to defrost for 30 minutes before slicing and serving. I topped mine with melted chocolate sauce and crushed nuts.
