Rye, semolina, cranberry muffins


1 cup rye flour

1/2 cup semolina

1/2 cup of oats

1/2 teaspoon salt

3 tsp baking powder

2 tablespoons agave nectar

2 eggs

1 cup of natural yoghurt

4 tablespoons coconut oil

1/2 cup of dried cranberries


Combine all the dry ingredients in a bowl. in another bowl blend eggs, yoghurt and oil. Add cranberries to the egg mix. Add the egg mix to the bowl with the dry ingredients, just stir do not beat.

fill 12 muffin pans 2/3 full with the mixture, sprinkle over with chia seeds if you wish to. bake in a preheated oven at 170 degrees centigrade for 15-20 minutes. Check if they are done by inserting a toothpick into them, it should come away clean. allow to cool completely before removing from tray.
